This seemingly disparate population might be Houston’s most valuable asset, shaping aspects of the way we live.

And eat. In a place this enormous and pluralistic, foodways can blur. In Houston’s case, joyously so.

The city’s evolving food scene is known for the easy and logical (at least to us) way it blends food cultures. Houstonians heartily and hungrily endorse foods such as beef pho kolache at Koffeteria, where a Cambodian-American chef blends Texas Czech heritage with Vietnam’s national dish. Or Mumbai tacos engineered with paratha instead of tortillas at Cowboys & Indians. Coreanos serves Korean bulgogi burritos. And there are steamed buns stuffed with Thai fried chicken at Fat Bao.

So, load up the boudin eggrolls, bring us the brisket lasagna, and hand us a plate of shawarma tacos, we’re digging into the best culinary mashups in Houston:

Himalaya Fried Chicken (Himalaya Restaurant & Catering): Sultry masala spices are in the dredge coating chicken that is deep-fried Southern style. This sultry fried bird was a logical follow up to Himalay’as paratha-dilla (Indian quesadilla) and is a staple at this Indian-Pakistani restaurant.

Viet-Cajun Crawfish (Crawfish & Noodles): A quintessential Houston dish that blends the traditional Louisiana crab boil with Vietnamese herbs and spices. It is a defining Houston dish that owner Trong Nguyen helped make world famous.

Golden Bowl (ChopnBlok): Cajun jambalaya takes a West African route using jollof rice with spiced vegetables and curry sauce. Owner Ope Amosu, of Nigerian descent, was nominated for Best Chef Texas by the James Beard Foundation for his work at ChopnBlok, also recognized by Michelin Guide.

Egg Foo Young (Agnes & Sherman): Cantonese-American meets Gulf Coast in this crawfish-studded omelet served over rice and blanketed in a rich etouffee-style gravy. Partners Nick Wong and Lisa Lee’s many accolades include Texas Monthly’s 2026 Restaurant of the Year.

Thai Green Curry Boudin (Blood Bros. BBQ): This Asian-Cajun pork and pork liver sausage (boudin style) is flavored with Thai green curry and lemongrass and treated to Texas barbecue smoke from a team of Chinese-American brothers and Vietnamese-American pitmaster. Houston fusion is on the menu daily and celebrated with gusto.

Butter Chicken Ramen (Kitchen Rumors): Indian butter chicken makes nice with Japanese noodles at this modern Indian fusion restaurant from chef Jassi Bindra whose work with the Kahani Social Group restaurant collection (that includes Amrina) earned him a spot on Bravo’s “Top Chef” competition.

Naanzzas (Kiran’s): Chef Kiran Verma introduced Houston to elevated Indian cuisine but she’s not above finding the joy in an Italian pizza oven that crisps up naan flatbreads with lush Indian toppings such as lamb kebab, tandoori chicken, and spiced duck confit. This is Houston any way you slice it.

Udon Fideo (Belly of the Beast): Chef Thomas Bille won the James Beard Award for Best Chef Texas last year for his work at this Spring restaurant that serves inventive dishes such as hand-cut Japanese udon noodles in a Mexican fideo-style tomato crema with blue shrimp.

Oxtail Tamales (Lucille’s): Black southern comfort food staple (slow-braised oxtail) finds its way into a tamale, a Mexican staple. It’s garnished with Southern black bean pico de gallo, making it one of the signature dishes at chef/owner Chris Williams’ culinary valentine to black culture, Southern traditions, and Houston creativity.

Brisket Banh Mi (Khoi Barbecue): Houston’s ubiquitous banh mi is reenvisioned as the ultimate Texas sandwich when stuffed with smoked brisket at this popular Viet-Tex pop up serving dishes such as tamarind-spiced ribs and pho topped with smoked brisket.

Subscribe

<a data-ylk="slk:There's more to Houston with the Chronicle.
