Texas A&M University is getting a little bigger. Construction is about to begin on a new building at the College Station campus.

On Sept. 30, crews will start building Texas A&M’s new Meat Science & Technology Center at 3844 Finfeather Road, a 77,902-square-foot facility that will host a small meat processing plant, laboratory and university teaching facility. The new facility will replace the existing Rosenthal Meat Science and Technology Center, which was built in 1986. Construction is expected to be completed on Feb. 16, 2028.

“This facility allows us to reimagine meat science for the next generation,” G. Cliff Lamb, Ph.D., director of Texas A&M AgriLife Research, said in March about the new facility. “By integrating advanced technologies, we are expanding research capacity and advancing discovery to address critical challenges across animal agriculture and global food systems.”

Texas A&M University’s upcoming Meat Sciences & Technology Center was initially going to be at Texas A&M-RELLIS in Bryan. However on March 27, the System Board of Regents voted to move it to A&M’s main campus in College Station. The regents also approved adding more than $18 million to the budget, making the project’s ultimate cost just over $133 million.

“This is exactly where this program belongs,” Robert Albritton, Chairman of the Board of Regents, said in a statement in March. “At the center of campus, at the center of our mission, and at the center of an industry that matters to every Texan.”

Texas A&M is known for its agricultural program, including its meat science program that started in 1926. Students can take courses in meat chemistry, microbiology, processing techniques, meat judging, and even barbecue.
