A new book is coming out to help carnivores become experts on their next H-E-B visit or barbecue run.

Australian-turned-Texan Jess Pryles has made a name for herself as an expert on all things meat, from smoked barbecue to steak over a live fire. Creator of the Hardcore Carnivore seasoning and now fresh off being a judge on Food Network’s Pitmasters, Pryles is set to release her new book, Prime Cuts, which is a must-have for anyone wanting to expand their meat knowledge.

“They’re gonna have 100 delicious recipes, but also an entire hand-holding guide through choose it, prep it, cook it, store it, meat science, and the whole thing is categorized by different cuts,” Pryles said to MySA. “It’s designed so you can go into the grocery store and pick up any cut that you want, whether it’s on sale or cheap or what have you, and find a recipe for it and understand how to cook it.”

Pryles told MySA that it took her two years to craft Prime Cuts and that the entire book is inspired by her career as someone who went from knowing nothing about choosing meat to earning a master’s in meat sciences at Iowa State University.

“I love debunking and demystifying for people and making them feel confident in themselves. So this is everything I’ve learned in my career to make people better meat cooks themselves,” Pryles said to MySA. “It’s like, we’re taught how to choose a tomato for ripeness, but if you weren’t raised in a household where mom or dad knew how a lot about how to choose a ribeye. It can often just be that you’re stuck in this place of feeling like it’s too overwhelming. So that’s what I want to undo.”

Pryles also spoke about the state of the barbecue world amid rising beef prices affecting every barbecue joint in Texas. Her message to all Texans is to keep showing up and supporting the smokehouses as best you can.

“They’re trying to make it through while dealing with something they can’t control, which is these rising costs. They are also getting really creative with great side dishes and alternates, so don’t give up on them just because you assume it’s expensive. They will really appreciate seeing your face in line still,” Pryles said to MySA. “Whether it’s a trailer or a brick-and-mortar, they can probably all use some love right now. Maybe it’s even time to try that place you’ve never tried before or just do a Google and see what comes up and roll the dice and maybe make someone’s day by showing up in line for this small business.”

Prime Cuts publishes on October 6 and meat fanatics can hear Pryles speak in person during her Texas book tour.
