Customers at this 1920s Montrose mansion are surrounded by real-deal Mir\u00f3s and Picasso ceramics. White linens and doting service conjure another, calmer age. Nearly a decade on, even the precise plating from chef Luis Roger\u2019s kitchen makes you believe, for a few blissful moments, that there is order in a benign universe. Colors and shapes find their grounding in clear, deep flavors and finely honed textures \u2014 like the stirringly crisp crackles of the suckling pig, or the firm satin slide of salt cod. The seafood specials are always worth attention, whether you order the cod jowls with white beans, guindilla peppers and clams, or the springiest baby squidlets deepened with caramelized onion, parsley oil and squid ink.
