Word quickly spread.

“A lot of the industry folks were coming and swinging by and helping us spread the word,” Robledo said. “Next thing we knew, by December of that same year, we were having a problem of running out of food.”

The early success helped Cuantos Tacos build a loyal following, eventually earning recognition from the Michelin Guide.

But Robledo said tacos weren’t originally his first choice when considering opening a business. He had four other restaurant concepts in mind before deciding to focus on Mexico City-style tacos.

A trip to Mexico City in 2018 helped shape that vision.

Robledo visited several taco spots, studying the flavors and techniques he wanted to bring back to Austin.

“I’m gonna try to make sure to stay true to it, not mess with it, but just with my fingerprint,” Robledo said.

What’s next for Cuantos Tacos?

While the food truck has allowed Cuantos Tacos to build a following, Robledo said a permanent restaurant will provide opportunities to expand beyond the current menu.

The new location could feature additional dishes, rotating daily specials and more opportunities for creativity in the kitchen.

“We can grow the menu out a little bit more and be able to have more fun with more dishes outside of tacos,” Robledo said.

The restaurant also plans to remain closed on Mondays, just like the food truck.

However, Robledo hopes to use those days for special events, including pop-ups featuring guest chefs from other countries.

An exact opening date has not been announced, but Robledo said the goal is to open during the first three months of 2027.

Despite the recognition and success Cuantos Tacos has experienced over the years, Robledo said his greatest source of pride isn’t the awards or accolades – it’s the people who helped make the business what it is today.

“My team, to begin with, my team. And all the customers, the loyal customers,” Robledo said.

Now, as the business prepares to move into its first permanent restaurant, Robledo hopes to build on the same foundation that helped a small taco truck become a recognizable name in Austin’s food scene.

The Austin favorite, known for its Mexico City-style tacos, plans to expand from its popular food truck to…

[11
132,134,133
post-462833","post","type-post","status-publish","format-standard","has-post-thumbnail","category-austin","tag-austin","tag-austin-headlines","tag-austin-news
["GET
