SAN ANTONIO \u2014 Paloma Arellano understands the meaning of rise and grind. Every morning she arrives at her family\u2019s food truck \u201cRosas Kitchen.\u201c<\/p>\n
She\u2019s part of many San Antonians\u2019 morning routine.\u00a0\u00a0<\/p>\n
\u201cI\u2019ve been doing this for about six years\u2026full time? Three years,\u201d Arellano said.\u00a0<\/p>\n
She feels like a seasoned business owner at 24 years old. Making sure her mother \u201cLa Do\u00f1a\u201d Rosa Ruiz\u2019 dishes are served well, while juggling three food trucks.\u00a0<\/p>\n
\u201cWe learn every single day. Maybe it\u2019s just recipes or new laws and legislation that are getting passed,\u201d Arellano said.\u00a0<\/p>\n
She says the obstacles to clear to operate can be overwhelming.\u00a0<\/p>\n
\u201cGoing through the city, doing our water testing, getting our health permit, getting our fire inspection, food handlers and manager\u2019s license,\u201d Arellano listed.\u00a0<\/p>\n
The fees add up if a vendor wants to operate in multiple counties.\u00a0<\/p>\n
For example, if a truck operates in three counties, that\u2019s three inspections, three applications and three sets of fees.\u00a0<\/p>\n
However, a potential solution is coming, HB 2844, or the \u201cTexas Food Truck Freedom Bill,\u201d which aims to remove much of the red tape.\u00a0<\/p>\n
The new law signed by Gov. Greg Abbott in June will only require one statewide health permit.\u00a0<\/p>\n
Paloma Arellano\u2019s older sister, Olma Arellano, manages a separate food truck, Bagel Babes, owned by Manuel Rodriguez.\u00a0<\/p>\n
\u00a0She believes this will save the business hundreds of dollars annually.\u00a0<\/p>\n
\u201cI know what it is it is to go through the frustration at times going through duplicate permits,\u201d Olma Arellano said. \u201cLiterally duplicates that are the same thing, that mean the same thing.\u00a0<\/p>\n
She hopes those headaches will be gone when the law fully takes effect next summer.\u00a0<\/p>\n
\u201cI think that the funds money can definitely allocated into the business,\u201d Olma Arellano. \u201cAt the end of the day, that\u2019s what we want \u2026 we to be able offer our clientele a good product.\u201d\u00a0<\/p>\n
For her sister Paloma Arellano, it can mean the extra help she needs to keep all of her family\u2019s food trucks afloat.\u00a0<\/p>\n
