SYRACUSE, N.Y. — The Great New York State Fair wrapped up on Labor Day with one last day of food, live music, rides, and farm animals in Syracuse. So, now that the fair is over, what happens to the butter sculpture?

The 800 pounds of butter won’t go to waste, but instead, will be recycled in Genesee County. The sculpture will be sent to Noblehurst Farms in Pavilion on Tuesday afternoon. From there, the butter will be combined with other food waste and recycled into energy that will power the farm.

This year’s butter sculpture paid tribute to the 125th anniversary pays tribute to “The Wonderful Wizard of Oz” and its author, L. Frank Baum, of Chittenango. The centerpiece of the sculpture was a hot air balloon with the phrase “Dairy Defies Gravity”, a reference to the musical score in “Wicked”. The design also included three butter figures: a pregnant woman with a glass of milk, a six-month-old enjoying yogurt, and a toddler savoring a piece of cheese.

This is the 10th year in a row that the fair has recycled its butter sculpture for fuel. The sculpture has a local connection, being built using more than 800 pounds of butter from O-AT-KA Milk Products in Batavia.
