The Royals said that a reason Delaware North was picked to handle food and beverage operations at the team’s new downtown ballpark is that it “gives its general managers more leeway to adjust operations for their particular market,” according to Brian Kaberline of the K.C. BUSINESS JOURNAL. Royals President of Business Operations Cullen Maxey said it “happens to fit into a vision that we have going in, that we want to be authentically Kansas City.” The team had signed a series of extensions with current partner Aramark while settling on a site for the new ballpark. Maxey said that officials heard from Aramark as well as newer entrants in the field like Legends Global and Oak View Group. Maxey said that he views the concessions at the new ballpark “like a menu.” There will be “tried-and-true items, but also some flexibility to change, even season to season” (K.C. BUSINESS JOURNAL, 11/2).
