In response, the medical and research communities <a href=\"https:\/\/www.medpagetoday.com\/popmedicine\/cultureclinic\/118121\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.medpagetoday.com\/popmedicine\/cultureclinic\/118121\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"balked\" data-node-id=\"0.0.4\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">balked<\/a>, stating that eating too much saturated fat may increase your risk of heart disease. The fight over the fat reminded us of a story we originally published in 2021 that had two sides warring over what is a deceptively complex\u2014and often misunderstood\u2014 nutrient. The information in this article remains accurate and is, clearly, as relevant today as it was back then.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"2\" class=\"body-dropcap css-1xzgd0b emevuu60\">ALBI SKENDERI IS sitting on a leather love seat in his studio apartment in Manhattan\u2019s Meatpacking District. He\u2019s wearing a Henley shirt that accentuates his build: six feet and 180 hard, veiny pounds.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"5\" class=\"css-6wxqfj emevuu60\">The Meatpacking District is an aptly named neighborhood for Skenderi to live in. \u201cI switched to a carnivore diet a couple months ago,\u201d says Skenderi, who is 33 and works in finance. \u201cOne of my coworkers was heating up steak in the microwave at eight in the morning, smelling up the entire office. And I was like, \u2018Dude, what are you doing?\u2019\u201d<\/p>\n<p data-journey-content=\"true\" data-node-id=\"6\" class=\"css-6wxqfj emevuu60\">His colleague had discovered the diet from listening to an episode of The Joe Rogan Experience podcast and replied, \u201c<a href=\"https:\/\/www.menshealth.com\/nutrition\/a27405997\/carnviore-diet-plan\/\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.menshealth.com\/nutrition\/a27405997\/carnviore-diet-plan\/\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"Meat\" data-node-id=\"6.3\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">Meat<\/a> is all I\u2019ve been eating for the last couple weeks. But this guy made me wonder . . . Am I doing this all wrong? I went down a rabbit hole. So I went to Whole Foods and bought a bunch of steak.\u201d <\/p>\n<p data-journey-content=\"true\" data-node-id=\"8\" class=\"css-6wxqfj emevuu60\">Even crazier and more confusing than Skenderi\u2019s dietary 180 is the fact that scientists can\u2019t yet tell us for sure which approach to eating is healthier. At the heart of the debate is a nutrient most commonly associated with animal proteins\u2014saturated fat\u2014and whether or not eating too much  of it will kill you.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"9\" class=\"css-6wxqfj emevuu60\">The fact that podcasts, books, and movies can draw on research about meat and saturated fat\u2014and if you should consume it\u2014and come to opposite conclusions  shouldn\u2019t be surprising. <\/p>\n<p data-journey-content=\"true\" data-node-id=\"10\" class=\"css-6wxqfj emevuu60\">Nutritional science is less certain than you might imagine, and warring, possibly compromised camps are  exploiting that squishiness to promote polar-opposite agendas. And not just in pop culture.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"11\" class=\"css-6wxqfj emevuu60\">This war is taking place in our nation\u2019s capital and in the halls of our most  venerated academic institutions. It involves allegations of biased research funding from Big Beef and Nut Boards, a contrarian investigative journalist, and an esteemed Ivy League researcher railing against \u201cthe disinformation triangle.\u201d<\/p>\n<p data-journey-content=\"true\" data-node-id=\"12\" class=\"css-6wxqfj emevuu60\">It has professors and deans at Harvard and Yale slinging mud. It includes accusations of data misrepresentation, fear mongering, political hardball, and all-around general bullshitting. <\/p>\n<p data-journey-content=\"true\" data-node-id=\"13\" class=\"css-6wxqfj emevuu60\">The war has grown more intense with the anticipated  release of the federal government\u2019s 2020-25 dietary guidelines, sending both sides into a blitzkrieg assault to either keep or kill the long-standing saturated-fat recommendations. <\/p>\n<p data-journey-content=\"true\" data-node-id=\"14\" class=\"css-6wxqfj emevuu60\">And the fallout from this war is hitting average Americans, driving more of us to search for dietary salvation at the poles. Veganism rose nearly 1,000 percent in the U.S. between 2010 and 2019. According to Nielsen, nearly 40 percent of Americans say they\u2019re making an effort to eat more \u201cplant-based\u201d products.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"15\" class=\"css-6wxqfj emevuu60\">Yet meat and dairy consumption has also ticked upward; there\u2019s now a bevy of mail-order meat-subscription <a href=\"https:\/\/www.menshealth.com\/nutrition\/g30295441\/best-mail-order-meat\/\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.menshealth.com\/nutrition\/g30295441\/best-mail-order-meat\/\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"companies\" data-node-id=\"15.1\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">companies<\/a>, and carnivore diet books are best sellers.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"16\" class=\"css-6wxqfj emevuu60\">When those new guidelines do drop, most of us might be left to wonder: Who can we trust in this billion-dollar food fight? And what does all this mean for our health? <\/p>\n<p>The Case for Caution<\/p>\n<p data-journey-content=\"true\" data-node-id=\"19\" class=\"css-6wxqfj emevuu60\">TO UNDERSTAND THE history of governmental nutrition guidelines in the U.S., you have to know nutrition research at Harvard University. To do that, you have to know Walter Willett, M.D., Dr.P.H. <\/p>\n<p data-journey-content=\"true\" data-node-id=\"20\" class=\"css-6wxqfj emevuu60\">Dr. Willett, 75, is slim but sturdy, with a head of silver hair and a wispy white mustache. Food was considered medicine in the sense that eating a healthy diet moved you further away from malnutrition and disease.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"24\" class=\"css-6wxqfj emevuu60\">Then, in the 1950s, Ancel Keys, Ph.D., a physiologist at the University of Minnesota, noticed a paradox. Rich guys in America were well-fed, but they suffered from a high rate of heart disease. Middle-aged men in the U.S. had a four- to ten-times-greater risk of the disease compared with men in postwar Europe, Japan, and other countries. <\/p>\n<p data-journey-content=\"true\" data-node-id=\"25\" class=\"css-6wxqfj emevuu60\">Keys believed diet, specifically a diet that included lots of saturated fat, was to blame. Fat made up 40 percent of the calories in the average American diet but just 20 percent in the Italian one. <\/p>\n<p data-journey-content=\"true\" data-node-id=\"26\" class=\"css-6wxqfj emevuu60\">Keys figured that if people ate less fat, they\u2019d reduce their blood cholesterol and, therefore, their risk of heart disease. Eisenhower went on a low-fat diet.\u201d Not long after, the federal government started raising concerns about fat in the diet.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"29\" class=\"css-6wxqfj emevuu60\">In 1980, Dr. Willett earned his doctorate from the Harvard School of Public Health and joined the epidemiology department as a <a href=\"https:\/\/www.hsph.harvard.edu\/walter-willett\/\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.hsph.harvard.edu\/walter-willett\/\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"professor\" data-node-id=\"29.1\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">professor<\/a>. He developed rigorous diet questionnaires, which researchers distributed to nearly 122,000 nurses, looking for links between eating habits and health.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"30\" class=\"css-6wxqfj emevuu60\">\u201cWe set the study up to look at the type of fat because of the concern at that time,\u201d he says of the landmark <a href=\"https:\/\/www.nurseshealthstudy.org\/\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.nurseshealthstudy.org\/\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"Nurses\u2019 Health Study\" data-node-id=\"30.1\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">Nurses\u2019 Health Study<\/a>.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"31\" class=\"css-6wxqfj emevuu60\">Dr. Willett\u2019s work has consistently shown that, for heart disease, saturated fats aren\u2019t necessarily bad. But they also aren\u2019t good. \u201cIt\u2019s really about comparison,\u201d he says. \u201cIf you compare saturated fat to trans fats, then saturated fat looks good.\u201d<\/p>\n<p data-journey-content=\"true\" data-node-id=\"32\" class=\"css-6wxqfj emevuu60\">For every 2 percent of your calories that come from trans fats (the FDA <a href=\"https:\/\/www.menshealth.com\/nutrition\/a21613814\/trans-fat-fda-ban\/\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.menshealth.com\/nutrition\/a21613814\/trans-fat-fda-ban\/\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"banned\" data-node-id=\"32.1\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">banned<\/a> artificial trans fats in 2015, in part due to Dr. Willett\u2019s work), for example, your coronary-heart-disease risk rises by 23 percent, according to a review in The New England Journal of Medicine. \u201cBut if you compare it to unsaturated fats, then saturated fat looks bad,\u201d says Dr. Willett.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"33\" class=\"css-6wxqfj emevuu60\">But Dr. Willett, despite his academic stature and decades of expertise, has his critics.<\/p>\n<p>Poking the Bear<\/p>\n<p data-journey-content=\"true\" data-node-id=\"36\" class=\"css-6wxqfj emevuu60\">NINA TEICHOLZ, 55, was \u201csomething of a vegetarian for 25 years,\u201d she says. They\u2019re the most calorically efficient way to get the vitamins and nutrients you need for life.\u201d<\/p>\n<p data-journey-content=\"true\" data-node-id=\"40\" class=\"css-6wxqfj emevuu60\">Teicholz says there is evidence these foods are healthy even at nearly twice the current guideline recommendation. Suggesting that people limit saturated fats, she argues, steers people away from whole  foods such as red meat and dairy.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"41\" class=\"css-6wxqfj emevuu60\">Teicholz wrote a <a href=\"https:\/\/www.menshealth.com\/health\/a19526694\/saturated-fat-1\/\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.menshealth.com\/health\/a19526694\/saturated-fat-1\/\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"piece\" data-node-id=\"41.1\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">piece<\/a> for this magazine in 2007 called \u201cWhat If Bad Fat Is Actually Good for You?\u201d and has appeared on The Joe Rogan Experience to talk about the topic. <\/p>\n<p data-journey-content=\"true\" data-node-id=\"42\" class=\"css-6wxqfj emevuu60\">In 2014 her career shifted after John Arnold tweeted an op-ed she wrote for The Wall Street Journal about saturated fat.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"43\" class=\"css-6wxqfj emevuu60\">Arnold is a billionaire hedge-fund manager with a history of bankrolling counterintuitive nutritional ideas. For example, Arnold spent $40 million in 2012 and 2013 to launch the <a href=\"https:\/\/nusi.org\/\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/nusi.org\/\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"Nutrition Science Initiative\" data-node-id=\"43.1\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">Nutrition Science Initiative<\/a>, a project that \u201csupports research that tests fundamental assumptions about the metabolic and hormonal causes of obesity and related disorders,\u201d as stated on its website.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"44\" class=\"css-6wxqfj emevuu60\">According to Teicholz, she reached out to Arnold after the tweet and he invited her to meet his team at the Arnold Foundation. That meeting eventually led to the Arnold Foundation funding Teicholz to conduct an analysis of the 2015 dietary-guidelines advisory-committee report, which was an independent project, she says.<br data-node-id=\"44.1\"\/><\/p>\n<p data-journey-content=\"true\" data-node-id=\"45\" class=\"css-6wxqfj emevuu60\">\u201cFollowing  that, I was funded to start the <a href=\"https:\/\/www.nutritioncoalition.us\/\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.nutritioncoalition.us\/\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"Nutrition Coalition\" data-node-id=\"45.1\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">Nutrition Coalition<\/a>, whose main goal at that point was simply to educate policy makers about the need for an outside review of the dietary-guidelines process, since there had never been one,\u201d she says.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"46\" class=\"css-6wxqfj emevuu60\">Teicholz is the Nutrition Coalition\u2019s <a href=\"https:\/\/www.nutritioncoalition.us\/staff\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.nutritioncoalition.us\/staff\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"executive director\" data-node-id=\"46.1\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">executive director<\/a>, a role that, at least as of 2018, was paying her $144,000 a year. The coalition, a 501(c)(3) nonprofit, reports that its funding comes from  donations and grants. In 2018, it brought in roughly half a million dollars.<\/p>\n<p><img draggable=\"true\" alt=\"author nina teicholz who wrote the big fat surprise\" title=\"Author Nina Teicholz who wrote The Big Fat Surprise\" loading=\"lazy\" width=\"1800\" height=\"1200\" decoding=\"async\" data-nimg=\"1\" style=\"color:transparent;width:100%;height:auto;\"   src=\"https:\/\/www.newsbeep.com\/us\/wp-content\/uploads\/2025\/10\/march-18-2015-author-nina-teicholz-who-wrote-the-big-fat-news-photo-1610145975.\" class=\"css-0 e1g79fud0\"\/>Vince Talotta\/\/Getty Images<\/p>\n<p>Nina Teicholz in 2015.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"48\" class=\"css-6wxqfj emevuu60\">The Nutrition Coalition has argued that the government\u2019s dietary guidelines are based on weak scientific evidence. \u201cIn order to continue the limits on saturated fat, health officials must show ample and consistent evidence that these fats damage health,\u201d the coalition has <a href=\"https:\/\/www.nutritioncoalition.us\/saturated-fats-do-they-cause-heart-disease\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.nutritioncoalition.us\/saturated-fats-do-they-cause-heart-disease\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"stated\" data-node-id=\"48.1\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">stated<\/a>. It points to some 20 review studies that have shown an inconsistent link between saturated fat and heart disease.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"49\" class=\"css-6wxqfj emevuu60\">What\u2019s more, the Nutrition Coalition charges that the members of the USDA\u2019s 2020-25 guidelines committee have damning potential conflicts of  interest. Three of the 20 members of the most recent committee, the coalition highlights in <a href=\"https:\/\/www.nutritioncoalition.us\/news\/2020-dietary-guidelines-committee\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.nutritioncoalition.us\/news\/2020-dietary-guidelines-committee\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"a post\" data-node-id=\"49.1\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">a post<\/a> on its website, have previously received funding from nut commissions or the potato industry, or were affiliated with Nestl\u00e9 or Dannon.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"50\" class=\"css-6wxqfj emevuu60\">But the accusations fire both ways. <\/p>\n<p data-journey-content=\"true\" data-node-id=\"51\" class=\"css-6wxqfj emevuu60\"><a href=\"https:\/\/davidkatzmd.com\/\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/davidkatzmd.com\/\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"David L. Katz\" data-node-id=\"51.0\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">David L. Katz<\/a>, M.D., M.P.H., Ph.D., founding director of Yale University\u2019s Yale-Griffin Prevention Research Center, and other scientists believe the Nutrition Coalition is \u201clobbying\u201d for the meat industry, which has been influencing U.S. dietary guidelines for decades.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"52\" class=\"css-6wxqfj emevuu60\">Why would the beef industry care about the arguments for or against saturated fats? <\/p>\n<p data-journey-content=\"true\" data-node-id=\"53\" class=\"css-6wxqfj emevuu60\"><a href=\"https:\/\/steinhardt.nyu.edu\/people\/marion-nestle\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/steinhardt.nyu.edu\/people\/marion-nestle\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"Marion Nestle\" data-node-id=\"53.0\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">Marion Nestle<\/a>, Ph.D., M.P.H., a food and nutrition researcher at New York University, explains it this way: \u201cThe guidelines currently tell us to eat more in the context of foods but use nutrients when referring to what you should eat less of. Nutrients are euphemisms for foods. Saturated fat means meat. They don\u2019t have to say, \u2018Eat less of those foods\u2019 directly, thereby saving a lot of political hell,\u201d Nestle says.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"54\" class=\"css-6wxqfj emevuu60\">There is no evidence that the Nutrition Coalition receives funding from the beef or dairy industry, or any industry at all, but its scientific board does include a member with ties to Virta Health, a company that recommends high-fat, ketogenic diets to help treat insulin resistance in people with diabetes.<\/p>\n<p><img draggable=\"true\" alt=\"beef cattle from above\" title=\"Beef Cattle From Above\" loading=\"lazy\" width=\"2125\" height=\"1416\" decoding=\"async\" data-nimg=\"1\" style=\"color:transparent;width:100%;height:auto;\"   src=\"https:\/\/www.newsbeep.com\/us\/wp-content\/uploads\/2025\/10\/beef-cattle-from-above-royalty-free-image-1610148339.\" class=\"css-0 e1g79fud0\"\/><\/p>\n<p>Bim\/\/Getty Images<\/p>\n<p data-journey-content=\"true\" data-node-id=\"56\" class=\"css-6wxqfj emevuu60\">And the coalition has supported the work of scientists who conduct research funded by the beef industry. And there\u2019s another grenade critics of the Nutrition Coalition lob: a lack of necessary experience.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"57\" class=\"css-6wxqfj emevuu60\">\u201cThe people who have positions of prominence [at the Nutrition Coalition] include many people with no formal training in nutrition or in science,\u201d Dr. Katz says.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"58\" class=\"css-6wxqfj emevuu60\">In fact, half of the coalition\u2019s <a href=\"https:\/\/www.nutritioncoalition.us\/board-of-directors\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.nutritioncoalition.us\/board-of-directors\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"board\" data-node-id=\"58.1\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">board<\/a> had no previous experience in the health sector\u2014Teicholz included. She has a B.A. in American studies and an M.A. in Latin American studies.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"59\" class=\"css-6wxqfj emevuu60\">Despite the accusations made against it, the Nutrition Coalition has moved the dial. <\/p>\n<p data-journey-content=\"true\" data-node-id=\"60\" class=\"css-6wxqfj emevuu60\">According to Teicholz, her \u201cmost successful effort as an advocate was to plant the idea, in 2015, that Congress might consider an independent outside review of the dietary guidelines. The hope for this review was to improve the transparency and scientific rigor of the guidelines.\u201d<\/p>\n<p data-journey-content=\"true\" data-node-id=\"61\" class=\"css-6wxqfj emevuu60\">And she has chosen to respond to her critics.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"62\" class=\"css-6wxqfj emevuu60\">Teicholz is at odds with Harvard\u2019s research, and in particular Dr. Willett, because \u201che has significant intellectual and financial conflicts of  interest which he almost never declares in any of his papers,\u201d she says, and \u201cthe studies he oversees are a significant part of the foundation of the dietary guidelines.\u201d<\/p>\n<p><img draggable=\"true\" alt=\"bacon strips being cooked in frying pan close up\" title=\"Bacon strips being cooked in frying pan. Teicholz has published a ten-page dossier laying out the terms of how Dr. Willett\u2019s vegan agenda can be explained by his ideological and financial conflicts.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"65\" class=\"css-6wxqfj emevuu60\">Maybe scientists could write Teicholz off (and some within the field have). Except that more minds in nutrition are becoming sympathetic to the idea that perhaps animal foods aren\u2019t as bad as science has previously made them seem.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"66\" class=\"css-6wxqfj emevuu60\">\u201cI kind of appreciate [what she\u2019s doing],\u201d says Tamar Haspel, a columnist for The Washington Post who has been covering nutrition and the food industry for two decades. \u201cShe\u2019s poking the bear, and the bear needed to be poked.\u201d<\/p>\n<p>All Hell Breaks Loose<\/p>\n<p data-journey-content=\"true\" data-node-id=\"69\" class=\"css-6wxqfj emevuu60\">IN THE FALL of 2019, a group of scientists dropped a series of six <a href=\"https:\/\/www.acpjournals.org\/doi\/10.7326\/M19-1621\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.acpjournals.org\/doi\/10.7326\/M19-1621\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"papers\" data-node-id=\"69.4\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">papers<\/a> in the Annals of Internal Medicine, one of the most influential journals in the field, that reviewed the research on red and processed meats.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"70\" class=\"css-6wxqfj emevuu60\">The papers included studies assessing the health risks of consuming those foods, ultimately questioning the validity of the health guidelines as they pertained to saturated fat. <\/p>\n<p data-journey-content=\"true\" data-node-id=\"71\" class=\"css-6wxqfj emevuu60\">The 49-person research team found that among study participants, those who ate about four to seven servings of red and processed meats a week had approximately the same risk of cancer, heart attack, or death from any cause as those who ate one to four servings a week.<\/p>\n<p><img draggable=\"true\" alt=\"\u201cthis research sent the other side, scientists who have shaped american food policy for the past four decades, scrambling into defcon 1\u201d\" title=\"\u201cthis research sent the other side, scientists who have shaped american food policy for the past four decades, scrambling into defcon 1\u201d\" loading=\"lazy\" width=\"1350\" height=\"652\" decoding=\"async\" data-nimg=\"1\" style=\"color:transparent;width:100%;height:auto;\"   src=\"https:\/\/www.newsbeep.com\/us\/wp-content\/uploads\/2025\/10\/pq-2-1610399273.png\" class=\"css-0 e1g79fud0\"\/><\/p>\n<p>Getty Images<\/p>\n<p data-journey-content=\"true\" data-node-id=\"73\" class=\"css-6wxqfj emevuu60\">The difference between the two groups meant that for every 1,000 people who eat less meat, only two would avoid the increased risk of death from any cause that comes with eating more meat.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"74\" class=\"css-6wxqfj emevuu60\">Based on these findings, this group published its own \u201cdietary guideline recommendations\u201d for Americans: You enjoy beef and bacon, so continue eating it.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"75\" class=\"css-6wxqfj emevuu60\">This research sent the other side, scientists who have shaped American food policy for the past four decades, scrambling into Defcon 1.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"76\" class=\"css-6wxqfj emevuu60\">Reenter Dr. Katz, who also leads <a href=\"https:\/\/www.truehealthinitiative.org\/\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.truehealthinitiative.org\/\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"True Health Initiative\" data-node-id=\"76.1\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">True Health Initiative<\/a> (THI), a group of 500-plus health experts that derives its funding from 46 different non- and for-profit groups, most of which are in the fields of health care or nutrition and many of which promote plant-heavy diets or products.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"77\" class=\"css-6wxqfj emevuu60\">When prerelease copies of the Annals papers landed on the desks of Dr. Katz and others at THI, \u201cwe started calling one another and saying in effect . . . Holy shit, this is not for print,\u201d says Dr. Katz. \u201cWe thought [it was] going to hurt a lot of people.\u201d<\/p>\n<p data-journey-content=\"true\" data-node-id=\"78\" class=\"css-6wxqfj emevuu60\">Dr. Katz, who is a Men\u2019s Health advisor, believes the scientists who authored the Annals studies were leveraging the authority of the respected journal to issue their own set of \u201calternative \u2018guidelines,\u2019\u201d as he put it, without any actual legitimate authority: \u201cIf they\u2019d just published the [data] and not the guidelines, it would have been a yawn from us. But to devise guidelines directly at odds with your own findings and pretend like that\u2019s business as usual . . . this is a provocation,\u201d he says.<\/p>\n<p><img draggable=\"true\" alt=\"david l katz\" title=\"david l katz\" loading=\"lazy\" width=\"776\" height=\"583\" decoding=\"async\" data-nimg=\"1\" style=\"color:transparent;width:100%;height:auto;\"   src=\"https:\/\/www.newsbeep.com\/us\/wp-content\/uploads\/2025\/10\/screen-shot-2021-01-11-at-9-54-54-am-1610377007.jpg\" class=\"css-0 e1g79fud0\"\/>YouTube<\/p>\n<p>David L. We do so on the basis of grave concerns about the potential for damage to public understanding and public health,\u201d wrote Dr. Katz and his cosigners.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"81\" class=\"css-6wxqfj emevuu60\">But as THI cooked up its academic retort, the work of the independent committee tasked with reviewing nutrition and health topics that would inform the 2020-25 dietary guidelines, including possible adjustments to saturated-fat caps, was already under way.<\/p>\n<p>The Source of All This Confusion<\/p>\n<p data-journey-content=\"true\" data-node-id=\"84\" class=\"css-6wxqfj emevuu60\">&#8220;AT THE CORE of this conflict is the value of nutritional epidemiology,\u201d says <a href=\"https:\/\/www.stephanguyenet.com\/\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.stephanguyenet.com\/\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"Stephan J. Guyenet\" data-node-id=\"84.4\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">Stephan J. Guyenet<\/a>, Ph.D., a neuroscientist and obesity researcher. <\/p>\n<p data-journey-content=\"true\" data-node-id=\"85\" class=\"css-6wxqfj emevuu60\">\u201cSo let\u2019s say that people who eat lots of red meat have more heart attacks than people who eat less red meat,\u201d says Guyenet. \u201cYou could see that and conclude that red meat causes heart disease. But maybe people who are eating a lot of red meat are also smoking more cigarettes.\u201d<\/p>\n<p><img draggable=\"true\" alt=\"medium rare steak cut in half mens health saturated fat\" title=\"Medium Rare Steak Cut in Half\" loading=\"lazy\" width=\"2121\" height=\"1414\" decoding=\"async\" data-nimg=\"1\" style=\"color:transparent;width:100%;height:auto;\"   src=\"https:\/\/www.newsbeep.com\/us\/wp-content\/uploads\/2025\/10\/gettyimages-1197361625.jpg\" class=\"css-0 e1g79fud0\"\/><\/p>\n<p>Cavan Images<\/p>\n<p data-journey-content=\"true\" data-node-id=\"87\" class=\"css-6wxqfj emevuu60\">Teicholz says that when it comes to beef and dairy, the evidence on saturated fat is flawed. \u201cThese studies find extremely weak data associations, not causation,\u201d she says. <\/p>\n<p data-journey-content=\"true\" data-node-id=\"88\" class=\"css-6wxqfj emevuu60\"><a href=\"https:\/\/www.downstate.edu\/cellbiology\/faculty\/feinman.html\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.downstate.edu\/cellbiology\/faculty\/feinman.html\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"Richard Feinman\" data-node-id=\"88.0\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">Richard Feinman<\/a>, Ph.D., a professor at SUNY Downstate Health Sciences University, puts it like this: \u201cWillett\u2019s textbook on nutritional epidemiology is quite good in that it\u2019s thorough, but it doesn\u2019t let you draw the right conclusions. In a toxic tort case in a court of law, for example, these studies wouldn\u2019t hold up as evidence,\u201d he says.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"89\" class=\"css-6wxqfj emevuu60\">Dr. Willett believes his detractors and those who laud the supposed benefits of beef, in particular, are part of what he calls the disinformation triangle. \u201cIt\u2019s a triangle of interests that are people not working together to guide consumers,\u201d he says.<\/p>\n<p><img draggable=\"true\" alt=\"how shady nutrition advice circulates\" title=\"how shady nutrition advice circulates\" loading=\"lazy\" width=\"1080\" height=\"1300\" decoding=\"async\" data-nimg=\"1\" style=\"color:transparent;width:100%;height:auto;\"   src=\"https:\/\/www.newsbeep.com\/us\/wp-content\/uploads\/2025\/10\/disinformationtriangle-1610552627.png\" class=\"css-0 e1g79fud0\"\/><\/p>\n<p data-journey-content=\"true\" data-node-id=\"91\" class=\"css-6wxqfj emevuu60\">Its three points are food-industry groups, such as Big Beef; academics who make a career bashing others\u2019 epidemiological research and\/or supporting industry research that misleads the public; and the sensationalist media, which reports on that industry-funded research.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"92\" class=\"css-6wxqfj emevuu60\">His critics, he says, are missing the larger point: His food-frequency questionnaires were never designed to be perfect.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"93\" class=\"css-6wxqfj emevuu60\">A perfect nutrition study would be unfeasible, and downright unethical\u2014scientists would have to hold many thousands of people in a lab and feed them specific diets over the entirety of their lives. Dr. Willett says his type of studies are good enough to make rational decisions.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"94\" class=\"css-6wxqfj emevuu60\">But he isn\u2019t off the hook.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"95\" class=\"css-6wxqfj emevuu60\">Teicholz points out that Dr. Willett and Harvard\u2019s nutrition department have conducted studies funded by nut boards or other trade groups. <\/p>\n<p data-journey-content=\"true\" data-node-id=\"96\" class=\"css-6wxqfj emevuu60\">Nestle, the NYU nutrition researcher, is also aware of this funding and says, \u201cI really wish they wouldn\u2019t do that.\u201d<\/p>\n<p>The Danger of Isolationism<\/p>\n<p data-journey-content=\"true\" data-node-id=\"99\" class=\"css-6wxqfj emevuu60\">THERE&#8217;S YET ANOTHER complicating factor to all this: Although the saturated-fat debate centers primarily on red meat, the nutrient is found in many other foods.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"100\" class=\"css-6wxqfj emevuu60\">\u201cIt\u2019s not possible to eat saturated fat in isolation. Therefore you have to question the significance of studies that study saturated fat as opposed to the foods that contain it,\u201d says Nestle.<br data-node-id=\"100.1\"\/><\/p>\n<p data-journey-content=\"true\" data-node-id=\"101\" class=\"css-6wxqfj emevuu60\">Perhaps the strongest <a href=\"https:\/\/www.bmj.com\/content\/366\/bmj.l4137\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.bmj.com\/content\/366\/bmj.l4137\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"statement\" data-node-id=\"101.1\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">statement<\/a> suggesting a rethink on saturated-fat caps came out in The BMJ in 2019. <\/p>\n<p data-journey-content=\"true\" data-node-id=\"102\" class=\"css-6wxqfj emevuu60\">Nineteen leading scientists (many of whom declared ties to the dairy, nut, and other industries) concluded that the established guidelines \u201cfail to take into account considerable evidence that the health effects vary for different saturated fatty acids and that the composition of the food in which they are found is crucially important.\u201d<\/p>\n<p><img draggable=\"true\" alt=\"eating food close up of people hands taking slices of pizza group of friends sharing pizza together\" title=\"Close-up Of People Hands Taking Slices Of Pizza\" loading=\"lazy\" width=\"2121\" height=\"1414\" decoding=\"async\" data-nimg=\"1\" style=\"color:transparent;width:100%;height:auto;\"   src=\"https:\/\/www.newsbeep.com\/us\/wp-content\/uploads\/2025\/10\/gettyimages-941103886-1609432351.jpg\" class=\"css-0 e1g79fud0\"\/><\/p>\n<p>Jovanmandic<\/p>\n<p data-journey-content=\"true\" data-node-id=\"104\" class=\"css-6wxqfj emevuu60\">The saturated fats found in a square of dark chocolate or in nuts are different from those in a rib-eye steak. And they have different effects in the body, says <a href=\"http:\/\/www.chori.org\/Principal_Investigators\/Krauss_Ronald\/krauss_overview.html\" target=\"_blank\" data-vars-ga-outbound-link=\"http:\/\/www.chori.org\/Principal_Investigators\/Krauss_Ronald\/krauss_overview.html\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"Ronald Krauss\" data-node-id=\"104.1\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">Ronald Krauss<\/a>, M.D., Ph.D., director of atherosclerosis research at Children\u2019s Hospital Oakland Research Institute, who helped develop the American Heart Association\u2019s dietary guidelines in 2000.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"105\" class=\"css-6wxqfj emevuu60\">\u201cThere\u2019s not just one LDL cholesterol particle. They vary in size from large to small,\u201d says Dr. Krauss. \u201cThe smaller LDL particles have properties that make them more likely to have adverse effects in the artery and promote [heart disease]. This is why zoning in on saturated fat as a single macronutrient category as the basis for the nutritional recommendation, to me, is a flawed approach.\u201d<\/p>\n<p data-journey-content=\"true\" data-node-id=\"106\" class=\"css-6wxqfj emevuu60\">Lumping together all saturated fats, some scientists now believe, may steer the food-marketing industry toward advertising foods that are low in saturated fat, yes, but also high in refined starch and sugar.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"107\" class=\"css-6wxqfj emevuu60\">This effect happens often with many broad recommendations based upon single nutrients, says Trevor Kashey, Ph.D., a former cancer researcher who now owns <a href=\"https:\/\/www.trevorkasheynutrition.com\/\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.trevorkasheynutrition.com\/\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"Trevor Kashey Nutrition\" data-node-id=\"107.1\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">Trevor Kashey Nutrition<\/a>.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"108\" class=\"css-6wxqfj emevuu60\">In fact, it\u2019s happened in the recent past: The recommendation to eat more fiber is meant to encourage people to eat that nutrient from whole-food sources, says Kashey. Whole foods like grains, fruits, and vegetables. \u201cBut then,\u201d Kashey says, \u201cbakeries start making bran muffins.\u201d<\/p>\n<p>So: Is Saturated Fat Bad or Not?<\/p>\n<p data-journey-content=\"true\" data-node-id=\"111\" class=\"css-6wxqfj emevuu60\">FORMER U.S. SECRETARY of health and human services Sylvia Burwell and former secretary of agriculture Tom Vilsack oversaw the development of the current nutritional guidelines.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"112\" class=\"css-6wxqfj emevuu60\">And in 2015 Congress pulled the two into a hearing to ask about them. \u201cThe key here is taking a look at the preponderance, the greater weight of the evidence, and trying to make a judgment . . . this is really about well-informed opinion. I wish there were scientific facts,\u201d said Vilsack.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"113\" class=\"css-6wxqfj emevuu60\">And so was born a new directive for the scientific committee: to look at the totality of the nutrition and health research for those facts.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"114\" class=\"css-6wxqfj emevuu60\">Five years later, the 20 scientists on the advisory committee whose report forms the basis of the 2020-25 nutritional guidelines looked at the evidence about saturated fat and are recommending changing . . . nothing.<\/p>\n<p><img draggable=\"true\" alt=\"cropped image of hands preparing food on table mens health saturated fat\" title=\"Cropped image of hands preparing food on table\" loading=\"lazy\" width=\"2121\" height=\"1414\" decoding=\"async\" data-nimg=\"1\" style=\"color:transparent;width:100%;height:auto;\"   src=\"https:\/\/www.newsbeep.com\/us\/wp-content\/uploads\/2025\/10\/gettyimages-664647131-1609432419.jpg\" class=\"css-0 e1g79fud0\"\/><\/p>\n<p>Maskot<\/p>\n<p data-journey-content=\"true\" data-node-id=\"116\" class=\"css-6wxqfj emevuu60\">And, in all likelihood, the eventual government dietary guidelines will reflect that exact recommendation: Americans should consider swapping saturated fats with unsaturated fats and limit their saturated-fat intake to 10 percent or less of their total calories per day.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"117\" class=\"css-6wxqfj emevuu60\">But the report also stated that it\u2019s more important to account for a person\u2019s overall diet than individual nutrients. \u201cPeople do not consume nutrients or  foods in isolation but in various combinations over time,\u201d the scientists wrote.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"118\" class=\"css-6wxqfj emevuu60\">Instead, people should aim for \u201chigher intake of vegetables, fruits, legumes, whole grains, low- or nonfat dairy, lean meat and poultry, seafood, nuts, and unsaturated vegetable oils and low consumption of red and processed meats, sugar-sweetened foods and drinks, and refined grains.\u201d<\/p>\n<p data-journey-content=\"true\" data-node-id=\"119\" class=\"css-6wxqfj emevuu60\">That part of the report is a good one, nutrition experts argue.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"120\" class=\"css-6wxqfj emevuu60\">\u201cWe don\u2019t eat saturated fat,\u201d says Kashey. \u201cWe eat bacon cheeseburgers and ice cream.\u201d<\/p>\n<p data-journey-content=\"true\" data-node-id=\"121\" class=\"css-6wxqfj emevuu60\">Just 28 percent of the saturated fat the average American eats comes from proteins and dairy, such as a piece of meat or glass of milk. Sixty percent of it comes from multi-ingredient foods.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"122\" class=\"css-6wxqfj emevuu60\">\u201cIf people actually followed the guidelines and stopped eating all the bacon cheeseburgers and ice cream, they\u2019d be healthier,\u201d says Kashey.<\/p>\n<p><img draggable=\"true\" alt=\"\u201cthe best diet isn\u2019t carnivore\u2014and it isn\u2019t vegan, either it\u2019s where the warring sides of nutrition infighting can\u2019t often meet somewhere in the middle\u201d\" title=\"\u201cthe best diet isn\u2019t carnivore\u2014and it isn\u2019t vegan, either it\u2019s where the warring sides of nutrition infighting can\u2019t often meet somewhere in the middle\u201d\" loading=\"lazy\" width=\"1350\" height=\"714\" decoding=\"async\" data-nimg=\"1\" style=\"color:transparent;width:100%;height:auto;\"   src=\"https:\/\/www.newsbeep.com\/us\/wp-content\/uploads\/2025\/10\/pq-3-1610398847.png\" class=\"css-0 e1g79fud0\"\/><\/p>\n<p>.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"124\" class=\"css-6wxqfj emevuu60\">Nestle takes it even one step further to say that if people eat mostly whole foods and move more, saturated fat becomes practically irrelevant.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"125\" class=\"css-6wxqfj emevuu60\">In fact, 10 percent saturated fat in a diet of whole foods isn\u2019t all that limiting\u2014something like three eggs, two slices of bacon, a serving of full-fat Greek yogurt, and a broiled six-ounce New York strip topped with a pat of butter and washed down with a glass of whole milk in one day.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"126\" class=\"css-6wxqfj emevuu60\">All this said, the committee report does not offer the equivalent of a dietary blank check.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"127\" class=\"css-6wxqfj emevuu60\">\u201cThere aren\u2019t many true academics\u2014even the ones funded by the beef industry\u2014recommending people eat a ton of beef,\u201d says Haspel.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"128\" class=\"css-6wxqfj emevuu60\">The scientists and dietitians interviewed in this article suggested consuming up to four weekly servings of it.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"129\" class=\"css-6wxqfj emevuu60\">\u201cIf people want to eat red meat, we generally steer people toward leaner cuts,\u201d says <a href=\"https:\/\/www.precisionnutrition.com\/author\/brian-st-pierre\" target=\"_blank\" data-vars-ga-outbound-link=\"https:\/\/www.precisionnutrition.com\/author\/brian-st-pierre\" data-vars-ga-ux-element=\"Hyperlink\" data-vars-ga-call-to-action=\"Brian St. Pierre\" data-node-id=\"129.1\" class=\"body-link css-1d8p8n5 emevuu60\" rel=\"nofollow noopener\">Brian St. Pierre<\/a>, R.D., C.S.C.S., director of nutrition at Precision Nutrition. \u201cBecause that makes it easier to control intake.\u201d Not because of saturated fat specifically but calories generally.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"130\" class=\"css-6wxqfj emevuu60\">And the experts also agreed that the best diet isn\u2019t nutrient focused\u2014it\u2019s food focused. The best diet takes into account food preference, variety, and enjoyment. It\u2019s the sum of its parts.<\/p>\n<p data-journey-content=\"true\" data-node-id=\"131\" class=\"css-6wxqfj emevuu60\">And the best diet, they agreed, isn\u2019t carnivore\u2014and it isn\u2019t vegan, either.
