So I turned to those who know best, asking three chefs the things they intentionally do \u201cwrong\u201d in the kitchen that actually make their dishes better.<\/p>\n<p>      Oliver Ridgeway is the Chef Proprietor of <a href=\"https:\/\/www.camdenspitandlarder.com\/\" target=\"_blank\" rel=\"nofollow noopener\">Camden Spit and Larder<\/a> in Sacramento, CA, and one of the leaders of the city&#8217;s Farm-to-Fork movement.<\/p>\n<p>      Katie Vine is the culinary mind behind the blog <a href=\"https:\/\/dinnersdonequick.com\/\" target=\"_blank\" rel=\"nofollow noopener\">Dinners Done Quick<\/a>, with over 20 years in recipe development, specializing in air fryer and microwave recipes.<\/p>\n<p>      I spoke to them to reveal 10 cooking &#8220;rules&#8221; they break:<\/p>\n<p>      1.<\/p>\n<p>      \u201cSearing\u201d large cuts of meat in the oven.<\/p>\n<p>      2.<\/p>\n<p>      Adding &#8220;raw&#8221; alcohol to dishes.<\/p>\n<p>      4.<\/p>\n<p>      Making roux separately.<\/p>\n<p>      5.<\/p>\n<p>      Not soaking dried beans.<\/p>\n<p>      6.<\/p>\n<p>      Mixing fish with cheese.<\/p>\n<p>      7.<\/p>\n<p>      Using a tortilla press for flour tortillas.<\/p>\n<p>      8.<\/p>\n<p>      Skipping browning meat for stews and soups.<\/p>\n<p>      9.<\/p>\n<p>      Using a non-stick pan to sear meat and fish.<\/p>\n<p>      10.<\/p>\n<p>      Adding salt to whipped cream.<\/p>\n<p>      Which of these methods surprised you the most?
