If you\u2019re really into <a href=\"https:\/\/www.popularmechanics.com\/science\/a33621810\/air-force-cats-zero-gravity-weightlessness\/\" rel=\"nofollow noopener\" target=\"_blank\" data-ylk=\"slk:cats;elm:context_link;itc:0;sec:content-canvas\" class=\"link \">cats<\/a>, you might have even lesser-known color variants like seal point and ticked tabby. But there\u2019s officially a new cat color in town: salmiak, or \u2018salty liquorice.\u2019 You can see one <a href=\"https:\/\/mycatdna.com\/blogs\/news\/genetic-mutation-gives-cats-a-salty-liquorice-coat-colour\" rel=\"nofollow noopener\" target=\"_blank\" data-ylk=\"slk:here;elm:context_link;itc:0;sec:content-canvas\" class=\"link \">here<\/a>.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">The pretty black, white, and grey shade\u2014named for a popular snack food in Finland, where this coat color has been making itself known\u2014is thanks to a <a href=\"https:\/\/www.popularmechanics.com\/science\/health\/a42638271\/humans-can-still-grow-full-coat-fur\/\" rel=\"nofollow noopener\" target=\"_blank\" data-ylk=\"slk:fur;elm:context_link;itc:0;sec:content-canvas\" class=\"link \">fur<\/a> strand that starts off black near the root, but grows whiter and whiter out towards the tip. The coat was first spotted in 2007, and in 2019, it was brought to the attention of a group of cat experts lead by feline geneticist Heidi Anderson.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">Since then, the group has been trying to figure out exactly what causes this shade to express itself, and recently, they finally figured it out. A paper on the discovery has been published in the journal <a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/10.1111\/age.13438\" rel=\"nofollow noopener\" target=\"_blank\" data-ylk=\"slk:Animal Genetics;elm:context_link;itc:0;sec:content-canvas\" class=\"link \">Animal Genetics<\/a>.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">When you\u2019re digging into cat colors\u2014or expressions of genetic traits in general, honestly\u2014you start with the obvious and work your way out. So, the researchers naturally started by assuming that this new variant was just a fun way for the white-making \u2018dilution\u2019 <a href=\"https:\/\/www.popularmechanics.com\/science\/health\/news\/a28622\/gene-therapy-blindness\/\" rel=\"nofollow noopener\" target=\"_blank\" data-ylk=\"slk:gene;elm:context_link;itc:0;sec:content-canvas\" class=\"link \">gene<\/a> to make itself known.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">See, technically speaking, cats only come in two colors\u2014black and orange. Any other color is either a combination of those two <a href=\"https:\/\/www.popularmechanics.com\/science\/health\/a26656\/the-worlds-most-dangerous-colors\/\" rel=\"nofollow noopener\" target=\"_blank\" data-ylk=\"slk:colors;elm:context_link;itc:0;sec:content-canvas\" class=\"link \">colors<\/a>, a faded version of one of those colors (which is caused by the dilution gene) or both. So, when experts started seeing salt-and-pepper kitties running around, the natural assumption was that these were an interesting new expression of the dilution gene coming into play. Add a little more white than usual to your standard black cat, and you get salty liquorice.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">But after digging through all the known genetic variations that control the expression of that dilution gene in coat color, the team came up empty. So, they took the next step\u2014sequencing the entire <a href=\"https:\/\/www.popularmechanics.com\/science\/health\/a39610385\/entire-human-genome-officially-published\/\" rel=\"nofollow noopener\" target=\"_blank\" data-ylk=\"slk:genome;elm:context_link;itc:0;sec:content-canvas\" class=\"link \">genome<\/a> of two of these special felines and digging through the whole mess of genetic data to find what was causing these new coats to appear.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">It turns out that the answer was in what wasn\u2019t there. \u201cThere was a huge chunk of sequence missing downstream from the KIT gene,\u201d Anderson told <a href=\"https:\/\/go.redirectingat.com?id=74968X1596630&amp;url=https%3A%2F%2Fwww.newscientist.com%2Farticle%2F2431348-genetic-mutation-gives-cats-a-salty-liquorice-coat-colour%2F&amp;sref=https%3A%2F%2Fwww.popularmechanics.com%2Fscience%2Fa65625078%2Fnew-cat-color-discovered-genes%2F\" data-i13n=\"elm:affiliate_link;elmt:premonetized\" rel=\"sponsored nofollow noopener\" target=\"_blank\" data-ylk=\"slk:New Scientist;elm:affiliate_link;elmt:premonetized;itc:0;sec:content-canvas\" class=\"link  rapid-with-clickid etailiffa-link\">New Scientist<\/a>, referencing a gene known to affect white patterns in the coats of <a href=\"https:\/\/www.popularmechanics.com\/science\/animals\/a26454611\/animals-cant-domesticate\/\" rel=\"nofollow noopener\" target=\"_blank\" data-ylk=\"slk:animals;elm:context_link;itc:0;sec:content-canvas\" class=\"link \">animals<\/a>. And these cats were just\u2026 missing a piece of DNA right nearby.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">After testing 181 cats to make sure they knew what they were seeing, the team was able to confirm that the missing sequence was in fact responsible for the salmiak coat color. And the <a href=\"https:\/\/www.popularmechanics.com\/science\/health\/a60582264\/covid-two-years\/\" rel=\"nofollow noopener\" target=\"_blank\" data-ylk=\"slk:mutation;elm:context_link;itc:0;sec:content-canvas\" class=\"link \">mutation<\/a> was recessive\u2014the cat would only express this color if it inherited the mutation from both parents, which explains why this coloration isn\u2019t a common one.<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">Now that they\u2019ve solved the <a href=\"https:\/\/www.popularmechanics.com\/science\/a60591479\/hourglass-sand-mystery\/\" rel=\"nofollow noopener\" target=\"_blank\" data-ylk=\"slk:mystery;elm:context_link;itc:0;sec:content-canvas\" class=\"link \">mystery<\/a>, the team is happy to sit back and admire their pretty kitties along with the rest of the world. \u201cThese coats have aroused a lot of admiration for years,\u201d Anderson told New Scientist. \u201cIt\u2019s really exciting that we now have some genetic explanation for it.\u201d<\/p>\n<p class=\"mb-4 text-lg md:leading-8 break-words\">But they\u2019re not just putting their feet up. According to a <a
