Not in Texas \u2014 at least, not as much as it used to be.<\/p>\n<p>Texas barbecue joints are shutting their doors across the Lone Star State as sky-high beef prices turn brisket \u2014 once the centerpiece of a blue-collar meal \u2014 into a luxury item that many customers can no longer afford.<\/p>\n<p>From Houston suburbs to rural smokehouses, pitmasters say soaring wholesale beef costs, inflation and shrinking customer traffic are crushing margins and forcing some of the state\u2019s most celebrated BBQ institutions out of business.<\/p>\n<p>Soaring wholesale beef costs, inflation and shrinking customer traffic are crushing margins, according to Texas-based pitmasters. Kirby\u00e2s BBQ \/ Instagram<\/p>\n<p>\u201cThis is as bad as it gets,\u201d Houston-area pitmaster Russell Roegels<a href=\"https:\/\/www.washingtonpost.com\/nation\/2026\/05\/25\/some-texass-oldest-barbecue-joints-close-meat-prices-skyrocket\/\" target=\"_blank\" rel=\"noopener nofollow\"> told the Washington Post. <\/a><\/p>\n<p>\u201cEverybody\u2019s at risk these days: You\u2019re one bad week from closing.\u201d<\/p>\n<p>Among the casualties is Brett\u2019s BBQ Shop in Katy, which closed late last year after seven years in business, <a href=\"https:\/\/www.texasmonthly.com\/bbq\/higher-costs-fewer-customers-killing-texas-bbq-joints\/\" target=\"_blank\" rel=\"noopener nofollow\">according to Texas Monthly. <\/a><\/p>\n<p>The once-beloved smokehouse struggled with a steep rise in operating costs while customers cut back as menu prices climbed.<\/p>\n<p>Kirby\u2019s BBQ in New Caney <a href=\"https:\/\/www.the-independent.com\/us\/money\/beef-prices-texas-bbq-restaurants-b2983202.html\" target=\"_blank\" rel=\"noopener nofollow\">also shuttered after owner Shawn Jones<\/a> warned that \u201cabsolutely insane\u201d brisket prices were making barbecue prohibitively expensive for middle-class families.<\/p>\n<p>\u201cWhen brisket costs $36 a pound for the consumer and then you got ribs and sausage and sides and desserts and all that \u2026 you can easily be spending $70 to $100 for barbecue,\u201d Jones told his followers on YouTube.<\/p>\n<\/p>\n<p>\u201cThat\u2019s just not something that most of middle America can do as often as they would need to to support most barbecue joints.\u201d<\/p>\n<p>Other closures include acclaimed Fort Worth smokehouse Sabar Barbecue, East Texas staple Wright On Taco &amp; BBQ, Hill City Chop House in Tolar and Sweetie Pie\u2019s Ribeyes in North Texas.<\/p>\n<p>The carnage comes as the domestic cattle herd has shrunk to its lowest level in roughly 75 years following years of drought, soaring feed prices and mounting operational costs.<\/p>\n<p>Ground beef prices are up more than 15% from a year ago, while pitmasters say wholesale brisket now routinely costs $5 to $6 per pound before smoking, trimming and labor \u2014 forcing some restaurants to charge as much as $35 to $40 per pound just to stay afloat.<\/p>\n<p>The domestic cattle herd has shrunk to its lowest level in roughly 75 years following years of drought, soaring feed prices and mounting operational costs. Laurence \u2013 stock.adobe.com<\/p>\n<p>Industry leaders say the economics of brisket have become nearly impossible for small operators.<\/p>\n<p>A brisket can lose <a href=\"https:\/\/www.kbtx.com\/2026\/05\/13\/beef-prices-historic-highs-texas-bbq-restaurants-are-feeling-it-most\/\" target=\"_blank\" rel=\"noopener nofollow\">roughly half its weight during trimming and smoking<\/a>, meaning a restaurant paying around $5 to $6 per pound wholesale can wind up with a true cooked-meat cost north of $10 per pound before labor, wood, utilities and rent are factored in.<\/p>\n<p>Justin Manning, co-owner of C&amp;J Barbecue in Bryan, said restaurants would need to charge close to $40 per pound just to maintain sustainable margins.<\/p>\n<p>\u201cTo have a margin, I would need to be selling beef for $40 a pound, which no one can do,\u201d Manning told KBTX.<\/p>\n<p>The pressure is not limited to beef.<\/p>\n<p>Meat that was once considered widely affordable is now a luxury item for a growing number of Americans. Natalia Lisovskaya \u2013 stock.adobe.com<\/p>\n<p>Restaurant owners say everything from butcher paper and Styrofoam containers to insurance and fuel surcharges has become drastically more expensive over the past two years.<\/p>\n<p>Texas Restaurant Association CEO Emily Williams Knight warned that independent barbecue joints are especially vulnerable because they cannot easily pivot away from brisket, which remains the signature draw for Texas BBQ customers.<\/p>\n<p>\u201cIf you\u2019re a barbecue restaurant, you don\u2019t really have anywhere to move,\u201d Knight told KBTX.<\/p>\n<p>\u201cAnd I think that\u2019s where you\u2019re seeing a lot of these smaller barbecue restaurants begin to close, because they just don\u2019t have any options as the price continues to increase.\u201d<\/p>\n<p>Even top-tier destinations are struggling.<\/p>\n<p>Burnt Bean Co. in Seguin \u2014 ranked Texas Monthly\u2019s no. 1 barbecue joint \u2014 raised brisket prices to about $38 per pound and is considering limiting brisket availability to certain days of the week.<\/p>\n<p>East Texas staple Wright On Taco &amp; BBQ has been forced to close due to high beef prices. Wright On Taco &amp; BBQ \/ Facebook<\/p>\n<p>Owner Ernest Servantes said his restaurant has been operating in \u201csurvival mode\u201d for the past year.<\/p>\n<p>\u201cThere\u2019s always been price increases, but there\u2019s always been relief and it\u2019s gone down,\u201d Servantes told the Washington Post. <\/p>\n<p>\u201cNow we don\u2019t see any end in sight, and it\u2019s going to get scary here.\u201d<\/p>\n<p>Some pitmasters blame consolidation in the meatpacking industry, where four giant companies control the overwhelming majority of US beef processing.<\/p>\n<p>Texas Attorney General Ken Paxton <a href=\"https:\/\/texasattorneygeneral.gov\/news\/releases\/attorney-general-ken-paxton-launches-sweeping-investigation-alongside-trump-doj-meatpacking-industry\" target=\"_blank\" rel=\"noopener nofollow\">has launched investigations into possible anti-competitive conduct<\/a> by major meatpackers amid allegations that ranchers are being underpaid while consumers and restaurants are getting hammered by record-high prices.<\/p>\n","protected":false},"excerpt":{"rendered":"Where\u2019s the beef?
