So it\u2019s really your cooking method that affects the nutrient profile of these tubers more than <a href=\"https:\/\/www.today.com\/health\/diet-fitness\/healthiest-potatoes-rcna162132\" target=\"_blank\" rel=\"nofollow noopener\">the variety of potato.<\/a><\/p>\n<p id=\"anchor-00a930\" class=\"body-graf\">While there\u2019s nothing wrong with having some French fries here and there, you should generally opt for cooking methods that use less oil, says Natalie Rizzo, registered dietitian and TODAY nutrition editor.<\/p>\n<p id=\"anchor-66b656\" class=\"body-graf\">That includes cooking methods such as baking, roasting and steaming. And, if you include the skin, that adds even more nutrients. <\/p>\n<p>Why it Matters<\/p>\n<p id=\"anchor-8f3119\" class=\"body-graf\">Potatoes are healthy vegetables. <a href=\"https:\/\/www.today.com\/health\/diet-fitness\/are-potatoes-healthy-rcna222940\" rel=\"nofollow noopener\" target=\"_blank\">White potatoes <\/a>are packed with potassium and vitamin C; orange sweet potatoes are loaded with beta-carotene; and <a href=\"https:\/\/www.today.com\/health\/diet-fitness\/japanese-sweet-potato-vs-regular-sweet-potato-dietitian-rcna592126\" rel=\"nofollow noopener\" target=\"_blank\">Japanese sweet potatoes<\/a> (with purple skin) are rich in vitamins C and E.<\/p>\n<p id=\"anchor-fd156d\" class=\"body-graf\">Even in the form of French fries or <a href=\"https:\/\/www.today.com\/health\/diet-fitness\/healthiest-chips-rcna149193\" target=\"_blank\" rel=\"nofollow noopener\">potato chips,<\/a> potatoes are still a vegetable. But frying them to create those dishes adds extra calories, fat and other compounds that negatively affect your health. This can outweigh the health benefits found in a potato in its more natural form.<\/p>\n<p id=\"anchor-7eee0d\" class=\"body-graf\">\u201cYou don\u2019t want to overdo it with (adding fat during the cooking process),\u201d Rizzo explained previously, \u201cbecause that takes a potato from a healthy vegetable side dish to something that\u2019s really high in calories and saturated fat.\u201d<\/p>\n<p id=\"anchor-574888\" class=\"body-graf\">And don\u2019t forget to eat the skin! Much of the fiber in the potato, which supports gut and heart health, is in the skin. <\/p>\n<p>How to Get Started<\/p>\n<p id=\"anchor-17160f\" class=\"body-graf\">The healthiest ways to cook potatoes include baking, boiling, steaming and roasting because these require less added fat than frying.<\/p>\n<p id=\"anchor-da51f3\" class=\"body-graf\">If you do add fat, opt for olive oil or canola oil, which are among the healthiest cooking oils. <\/p>\n<p id=\"anchor-445e2b\" class=\"body-graf\">If you\u2019re not sure where to start, try these recipes:<\/p>\n<p id=\"anchor-6966f6\" class=\"body-graf\">When a recipe allows for it, keep the skin on your potatoes.
