Whipping up a quick, tasty and healthy snack can be a challenge, particularly if you’re seeking variety. Many home chefs opt for avocado on toast, adding a fried egg on top for an extra protein boost.

While avocados are brimming with healthy fats, fibre, and vitamins, the additional carbohydrates from the toast can lead to bloating and fatigue.

If you’re in search of a delicious, filling yet healthy quick meal, we recommend trying stuffed avocados. A culinary expert at Good Food suggested that incorporating spicy beans and feta can enhance this green delight, reports the Express.

They said: “This super speedy meal is packed with vegetarian sources of protein-top creamy avocados with spicy kidney beans and crumbled cheese.”

This recipe only requires 11 minutes of preparation time and serves two people. Here’s how to make it.

Ingredients

1⁄2 teaspoon of cumin seeds210g can red kidney beansOne large limeThree tomatoesOne banana shallotOne green chilliA handful of coriander85g fetaOne large or two small avocados

Method

Start by lightly toasting cumin seeds in a small pan, then mix them in a large bowl with beans, lime zest and juice, tomatoes, shallot, chilli, and coriander.

Next, crumble in the feta and gently toss everything together. Spoon the mixture onto the avocado halves, garnish with extra coriander leaves, and finish with a squeeze of lime wedges.

If you’re craving a savoury delight on a warm piece of toast but fancy an alternative to avocados, we recommend tomato confit. Expert chefs suggest that replacing avocado with this spread results in a “savoury-sweet” treat that’s “jammy,” satisfying, and bursting with flavour.

A chef at the Mediterranean Dish shared, “This confit tomato recipe is inspired by the tradition of preserving summer’s bounty. This gentle method not only concentrates the flavour of the tomatoes, but also preserves their soft, silky texture and infuses the oil with tomato essence and those of garlic and herbs.

“The oil itself becomes just as delicious as the tomatoes!” This technique, courtesy of the Mediterranean Dish, is designed to serve up to eight people or yield three cups. The preparation merely takes 10 minutes, but it requires two hours of slow cooking; the outcome is well worth the wait. Here’s how to make it.
