HOUSTON, Texas (KTRK) — For more than five decades, Kolache Shoppe has been a Houston staple, serving up pillowy pastries rooted in Czech tradition.
Founded in 1970, the beloved bakery has been known for its classic fillings. Today, that legacy continues under owner Randy Hines, who first learned the craft from the shop’s founder, Erwin Ahrens.
After years of mentorship, Randy and his wife, Lucy, took over the bakery in 2014. Since then, they’ve honored its deep Czech roots while evolving the menu in a uniquely Houston way by collaborating with some of the city’s most celebrated chefs.
In February, the Memorial location teamed up with Aaron Bludorn of Bar Bludorn for a savory standout: the Reuben Kolache. The special featured tender short-rib pastrami, housemade sauerkraut, and Gruyère cheese.
