All green leafy vegetables are healthy, but cavolo nero – also known as black kale – is the winner for me every time. The darker and greener the vegetables, the more plant compounds they generally contain. Magnesium, for example, forms a key part of the chlorophyll molecule, which makes green vegetables green. So the more chlorophyll you’ve got, the more magnesium there will be, which is great for your energy, mood, heart health and sleep.

Cavolo nero is also particularly fibrous, which keeps blood sugars steady, and contains folate for heart health. It’s also an excellent source of vitamins A, C and K1, which we need for blood clotting.
