Known for its minimalist menu and its signature “rip-and-dip” style of serving bagels, the brand’s arrival in Southern California brings a familiar name to a market that continues to see growing interest in elevated, specialty bagel concepts.

Founded in 2020, PopUp Bagels started as a small, pandemic-era project that focused on doing one thing well: serving hot, freshly baked bagels meant to be enjoyed whole. Rather than slicing bagels and assembling traditional sandwiches, the concept encourages customers to tear the bagels by hand and dip them into a rotating selection of schmears. That approach has become central to the brand’s identity and has helped differentiate it from more traditional bagel shops.
