SALISBURY TWP., Pa. – With the new year upon us, everyone wants to be their best selves.
Get started with planning simple meals for less stress during the week.
Weis Markets Registered Dietitian Emily Santanna was in the Sunrise Kitchen with Eve Russo Friday to share recipes that can help make your week just a little bit easier.
Apple-Dried Cherry Baked Oatmeal
To make:
1. Peel and chop apples.
2. Preheat oven to 350° and spray baking dish.
3. Mix eggs, almond milk, maple syrup, Greek yogurt, butter, cinnamon, vanilla and baking powder.
4. Fold in apples, oats, walnuts and dried cherries.
5. Spread mixture in baking dish.
6. Bake 40 minutes or until golden brown and 160° inside.
7. Cool 5 minutes and cut. Drizzle with maple syrup.
Avocado Chicken Salad Sandwiches (Sponsored by Avocados from Colombia)
To make:
1. Peel and pit avocado.
2. Chop rotisserie chicken, grapes and celery.
3. In bowl, smash avocado, lemon juice, parsley, salt and pepper with fork.
4. Fold in chicken, grapes and celery.
5. Serve on multigrain bread or eat with whole grain crackers.
*Substitution option: canned chicken for rotisserie chicken
To make:
1. Cook lean ground beef over medium heat in large skillet. Remove from skillet with slotted spoon, pouring off drippings.
2. Return to skillet and stir in hot sauce. Cook until heated through.
3. Heat taco shells according to package.
4. Build tacos: beef, lettuce, blue cheese dressing, carrot, celery and cilantro.
